Breakfast Egg Cups

Need: 1  muffin/cupcake tin (6 cup tin)

Ingredients: 6 Eggs, 1/2 cup chopped onion, 1/2 cup chopped red/green peppers, 1 cup of bacon or sausage* , OPTIONAL 1/4cup shredded cheddar cheese, season with salt, pepper,(red pepper flakes for Zing), 1/8 teaspoon Fresh Minced Garlic.  Preheat stove to 375. Cook Sausage or bacon per pkg instructions prior to adding to bowl. Coat muffin tin with cooking spray or use tin foil muffin cups.  Mix all ingredients in a bowl and pour into muffin tin leaving approx. 1/4 inch from the top of the muffin tin.  Cook for 10-15minutes.  Be sure to check eggs at ten min and watch accordingly not to burn.  Remove cooled EGG CUPS from the muffin tin and place two egg cups in a plastic container and refrigerate promptly.  This recipe will make 3 servings.  Enjoy a QUICK and Easy re-heat and run out the door in the morning meal that keeps you full until lunch!!!

Meat Loaf Cups

Need: 1  muffin/cupcake tin (6 cup tin)

Ingredients: 1 pound of ground beef, chicken, turkey or bison (you choose from one of the proteins listed).  1/4 cup fresh minced garlic, 1/4 chopped fresh onions, red peppers, green peppers, 1/4 cup chopped spinach, 1/4 cup diced fresh apple (any type) salt, pepper, (red pepper flakes for a spicy kick), onion salt.   Preheat oven to 400 degrees.  In a bowl mix all ingredients into your meat.  Fill each meat cup with the meat mixture and cook for 25-30 minutes.  Check your meat cups at 20 minutes and watch accordingly not to burn.
