Breakfast Egg Cups

Need: 1  muffin/cupcake tin (6 cup tin)

Ingredients: 6 Eggs, 1/2 cup chopped onion, 1/2 cup chopped red/green peppers, 1 cup of bacon or sausage* , OPTIONAL 1/4cup shredded cheddar cheese, season with salt, pepper,(red pepper flakes for Zing), 1/8 teaspoon Fresh Minced Garlic.  Preheat stove to 375. Cook Sausage or bacon per pkg instructions prior to adding to bowl. Coat muffin tin with cooking spray or use tin foil muffin cups.  Mix all ingredients in a bowl and pour into muffin tin leaving approx. 1/4 inch from the top of the muffin tin.  Cook for 10-15minutes.  Be sure to check eggs at ten min and watch accordingly not to burn.  Remove cooled EGG CUPS from the muffin tin and place two egg cups in a plastic container and refrigerate promptly.  This recipe will make 3 servings.  Enjoy a QUICK and Easy re-heat and run out the door in the morning meal that keeps you full until lunch!!!

Meat Loaf Cups

Need: 1  muffin/cupcake tin (6 cup tin)

Ingredients: 1 pound of ground beef, chicken, turkey or bison (you choose from one of the proteins listed).  1/4 cup fresh minced garlic, 1/4 chopped fresh onions, red peppers, green peppers, 1/4 cup chopped spinach, 1/4 cup diced fresh apple (any type) salt, pepper, (red pepper flakes for a spicy kick), onion salt.   Preheat oven to 400 degrees.  In a bowl mix all ingredients into your meat.  Fill each meat cup with the meat mixture and cook for 25-30 minutes.  Check your meat cups at 20 minutes and watch accordingly not to burn.

Before jumping into Nutrition Prep you may have some questions therefore we are here to address them and put your mind at ease.

Q.  Do I need cooking experience to participate?

A.  Absolutely not!  Our program is designed for any cooking level.  We  provide written and visual instructions to help in preparing the meals.  Our menu’s and prep are easy as 1,2,3!

Q.  What types of food will I be eating?

A.  Our meals plans consist of protein, vegetables and fruit.  A sample meal is:  turkey meatballs, squash and berry sherbet.

Q.  Will you customize my meals if I am allergic to certain food or dislike certain food?

A.  YES, we will definitely customize your meals.  Please let us know which foods you are allergic to or foods you do not enjoy.

Q.  Can I drink alcohol while participating in Nutrition Prep?

A.  If you enjoy alcohol we advise you to limit your intake and choose drinks that are low in sugar such as vodka.

Q.  What about snacks?  Will you provide healthy snacks ideas for me to eat?

A.  YES, we include snacks in the weekly menus.

Q.  How is Nutrition Prep LLC different than other diets on the market?

A.  Nutrition Prep LLC is not a diet; it is a lifestyle program!  Our service is a guide to a LIFESTYLE of Healthy Eating providing  recipes, shopping lists, an on0line kitchen and verbal/online assistance with a REAL PERSON to guide you during this LIFESTYLE CHANGE.

Your first warm welcome email put me at ease.  I have tried so many diet plans, counted, sorted you name it!  My choices are basic Meat, Veggies, Fruit and some Nuts.  Your recipes are INCREDIBLE.  I love watching your groups prepare meals on my computer, my questions are answered and I only wish I was there to taste your sugar free sauces and marinades.  I purchased the muffin tins first and followed your easy to prepare recipes, I cannot believe how easy it is to prep my meals for the work week.  You make serving sizes easy and the food is fresh and tastes GREAT!  You were right, I get home from work hungry I pull out a meal I prepared from the freezer and in 4 minutes I have a fresh meal!  Losing weight and staying healthy is about preparation!  I’m a believer and proud to say I have lost 20 pounds in 3 months!  The last ten to go, can’t wait to get your ever changing recipes next month!

Thanks Rebecca you have changed the lives of my ENTIRE FAMILY.  We were fast junkies racing from school to activities  to homework. Driving through the drive thru was a staple in my home.  I am embarrassed to say but my kids are over weight and it’s my fault.  I now feel empowered and we are all losing weight together but we are NOT depriving ourselves!  The food tastes so good!  The recipes are easy.  I spend 2 hours in the kitchen on Sunday, I watch you on my computer and laugh.  I use the Muffin Tins super idea,  the pre-formed servings make container storage and eating on the run a convenient thing to do.  We no longer want the drive thru, we come home to delicious and nutritious meals.  The kids have lost 8 pounds in a month without feeling deprived.  I thank you for saving my family! I don’t wanna jinx myself but  I’ve been feeling great!  I was just telling my boyfriend last night that I have yet to actually feel hungry!  I’m not skipping meals and I haven’t really felt hungry and cooking in muffin tins really helped me to not overeat as well great idea to make delicious FOOD in the perfect serving size.  Just eating what I need :-)   My work schedule is crazy!!!  I leave my house at 7:15 AM and don’t get home til almost 8:00 PM… so I make sure I eat breakfast cups, and pack my lunch and snacks of fruits and veggies to have throughout the day, I purposely over pack in fear that I will suddenly be hungry and get tempted to hit up a drive thru in between jobs, however, I haven’t felt hungry and come home with a bunch of food still in my little cooler that I haven’t touched!!!!
